Ingredients:

  • 2 handfuls of mixed greens (arugula, spinach, radicchio)

  • 1 avocado, sliced

  • 5–6 cherry tomatoes, halved

  • 1/2 cucumber, sliced into half-moons

  • 2 tbsp toasted pine nuts
