- Since they are harvested in the winter, Nyons olives shrivel in the cold and tend to have wrinkly skin
- Nyon olives are awarded AOC (Appellation d'Origine Controlee), a French certification that ensures the ingredients, quality and origins of a product
- As with other origin protected olives from South of France, these olives are traditionally a little bitter and have a strong aroma
